Plant-based Pad Thai
Enjoying the food you eat plays a part in our health - mentally and physically. How many times have you been unhappy or dissatisfied with a meal just because it was the same thing day in and out? Get variety back starting with this Plant-based Pad Thai.
𝐈𝐍𝐆𝐑𝐄𝐃𝐈𝐄𝐍𝐓𝐒:
1 tbsp coconut oil
1 cup of broccoli
1 cup shredded carrots2 tbsp coconut aminos
1 tbsp fish sauce
1/2 tbsp sriracha hot sauce *optional for taste*
1 tbsp peanut butter
1 tbsp water
1 pack of Miracle Noodles Fettucine
Green onions, thinly sliced
Bean sprouts
Cilantro
A squeeze of lime juice for toppings
𝐃𝐈𝐑𝐄𝐂𝐓𝐈𝐎𝐍𝐒:
1. Heat coconut oil on medium-high in a large skillet. Add broccoli and carrots and sauté for 6-8 minutes.
2. Whisk together coconut aminos, fish sauce, sriracha, peanut butter, and water in a small bowl.
3. Add the noodles and sauce to the skillet and mix. Add toppings and enjoy :)
