Miracle Noodle Ambassador, Teri, just loves her protein! She also loves the flavors of fall! Pumpkin! Cinnamon! Nutmeg! Oh my! Here is her take on an dessert in a festive apple carved as a cauldron with a witches broom, delicious apple cinnamon Miracle Rice "bubbles" and creepy edible eyeballs! Teri used Miracle Rice for a fun texture, extra fiber and flavor with apple cinnamon from an herbal tea infusion. She colored our rice with natural food coloring to make it spooky! Happy Halloween!

"I like to use herbal tea infusions as a calorie free way to flavor my shirataki noodles. The longer you allow the noodles//rice to sit in the liquid, the stronger the flavor profile. Add depth and dimension to your meals using this method! Have fun and experiment with different flavor profiles! You will want to make your infusion ahead of time, the night before."
Serves 12
Ingredients for Herbal Tea Infusion:
1/2 ounce of apple cinnamon loose leaf tea (you can cut the tea bags open if you do not have loose leaf on hand.)
16 ounces of boiling water
Plain Liquid Stevia
Directions
1.) Measure out the tea
2.) Pour tea into a glass container that you can lid
3.) Pour boiling water into container
4.) Add liquid stevia
4.) Let steep for 4-8 hours. The longer, the better.
5.) Strain and reserve liquid. Refrigerate.
Ingredients for Mousse
1 bag of Miracle Rice
Prepared herbal tea infusion
Watkins all natural food coloring
16 ounces of cream cheese
2 cups of heavy whipping cream
1 can of all natural pumpkin, unsweetened
A dash of salt
2 scoops of Cinnamon Cookie Batter Whey Protein (I used Level-1 by 1st Phorm)
1/2 tsp of Watkins vanilla extract
1/2 teaspoon of Watkins coffee extract
Sweet Leaf liquid stevia in english toffee
2 teaspoons of Saigon Cinnamon
1 teaspoon of Nutmeg
Apples
Directions
1.) Prepare Miracle Rice according to package directions
2.) Add Miracle Rice to tea infusion in a seal-able container.
3.) Add food coloring for desired effect.
4.) Refrigerate overnight or for a day
5.) In a mixer, combine cream cheese and pumpkin. Combine till smooth
6.) Add in heavy whipping cream and continue to combine
7.) Add in protein powder and all other ingredients. Adjust spices and sweetness according to preference. Combine till smooth and thick.
8.) At this point, you can place the mousse in a seal-able container in the fridge, or, if your rice is ready, strain the rice and fold into mixture with a spatula.
9.) Carve out and apple and place mixture inside
Decorative Additions:* Eyeballs: These are mozzarella balls with blueberries and cranberries secured with toothpicks
* Cauldron: I carved out honey crisp apples.
