Allison's Chicken Sausage Basil With Miracle Noodles

Ingredients


  • For Pesto Sauce: 3/4 cup pine nuts dry roasted.
  • Chicken sausage or any sausage you choose.
  • 2 cups fresh basil and 1 cup fresh dry mint.
  • 3-4 cloves of fresh garlic .
  • 1/2 cup Parmesan cheese.
  • 3 packages Miracle Noodle angel hair.
  • 1 cup olive oil.

Method

    1. First I make a pesto sauce. You can use your own or any jar but fresh is best. First place ¾ cup pine nuts dry roasted in frying pan. Roast for about 15 minutes until slightly brown don’t burn. Occasionally shake the pan to roast evenly. Let cool. Make the chicken sausage or any sausage you want. I fry the sausage in a frying pan or you could broil it. When it is done cover to keep warm. Then cut it up into chunks to serve.
    2. Take 2 cups fresh clean and dry basil and 1 cup fresh clean dry mint and put in food processor along with pine nuts and 3-4 cloves of grated garlic I use a zester* to get a paste. Since it’s a raw sauce, you do not want any pieces that the food processor may miss. Add about a ½ cup of Parmesan cheese. Turn on and drizzle through 1 cup of olive oil. Taste and add more garlic or cheese or more olive oil depending on your taste.
    3. To prepare the Miracle Noodles I use 3 packages for 4 people you can use however much you want. Get a frying pan and get it hot.
    4. In the meantime Fill a large bowl with cold water and dump in the noodles and using your hands swish around the noodles to remove all smells. Or just rinse very well in a colander. Drain noodles well.
    5. As soon as your frying pan is really hot dump in noodles and continue to dry fry until all water is gone. Stir and press down the noodles to squeeze out the water. Do this for about 10 minutes until the noodles start to stick. As soon as they are sticking add about 2 tablespoons of butter and fry the noodles in butter.
    6. Add about 2 grated garlic cloves. Do this for a good 5 minutes. Put hot noodles in a bowl and add the sausage and pesto and mix it up. Hope you enjoy!! Serves 4 people.

Note : A zester is a kitchen utensil to scrape the outermost portion of the peel of limes, lemons, oranges and other citrus fruits to add flavor to recipes.
