Garlic Shrimp & Kanten Pasta Recipe

I wanted to find out a little more about who was behind the clever recipe. It turns out that this creative and fascinating amateur chef, Veronica Ramirez, has way more recipes up her sleeve. 

I'll share with you her latest recipe: Garlic Shrimp & Kanten Pasta. But first, let me tell you a little bit about Veronica.... 

Veronica is a mother of two young girls. She is of El Salvadoran descent and her husband is of Mexican lineage. Both grew up eating the rich traditional dishes from their respective cultures.

Before she knew it, Veronica was 50 pounds overweight. She had no energy and relied on caffeine all day to survive the stress of raising two young girls. 

Realizing she needed a lifestyle change, Veronica started eating smaller low-carb meals throughout the day to balance blood sugar. Soon after, she discovered Miracle Noodles. Today, she's a brand Ambassador, enjoys good health and energy, and is paying it forward by working her way towards becoming a certified health coach. Her few clients so far: her husband, and her good friend. She even has introduced her coach and mentor to Miracle Noodle.

    "My husband and I still eat a lot of rice and beans," says Veronica. "I want to continue cooking the traditional dishes that my abuela (grandmother) taught my mother and I how to prepare, but in a healthier, low-carb way. That is the challenge."

    To prepare El Salvadoran and Mexican dishes healthier, Veronica says she uses ourMiracle Rice in a lot of dishes. And as for how she came up with the idea of the Miracle Ramen Burger, she says, "My husband was really craving a burger but we both want to continue to eat healthy and not slip back into bad habits, so I told him, 'Let me see what I can come up with....' "

    Veronica says she's especially partial to our Kanten pasta.

    Our Kanten pasta is so easy to prepare. It comes dry. You don't need to drain, rinse and boil. You just soak it in warm/hot water and stir it around for about 15-30 seconds. The best part about the Kanten is it has the same rich texture of high-carb Asian rice noodles. But Kanten has zero net grams of carbs and it's super high in fiber (6 grams per serving; 25% daily intake).  

    "The Kanten noodles have a great texture and flavor, and it really soaks up the flavor of the sauces I'm cooking with. Plus, it's so easy to prepare."

    Veronica adds, "Having a good texture and being easy to prepare are two really important factors for me because I don't ever want to look and feel again like I used to."

    Kanten Garlic Shrimp

    SIMPLE KANTEN PASTA WITH GARLIC SHRIMP

    Ingredients

    • 1 package of Miracle Noodle Kanten Pasta
    • 1  pound medium shrimp, peeled and deveined
    • 2 cloves garlic, minced
    • 1/4 cup of grated parmesan cheese
    • 4 tablespoons unsalted butter
    • Salt and freshly ground black pepper, to taste
    • Juice of 1 lemon, or more, to taste
    Instructions
    • Melt 4 tablespoons butter (use grass-fed) in a large skillet over medium high heat. Add garlic to the skillet, and cook, stirring frequently, until fragrant, about 1 minute. Add shrimp, salt and pepper, to taste. Cook, stirring occasionally, until pink, about 2-3 minutes; set aside.
    • Prepare Kanten Pasta according to package instructions (do not use boiling water)
    • Stir in shrimp and gently toss to combine, adding a the fresh lemon juice and cheese. 
    • Serve immediately.
