A Recipe for Healthy Pasta Salad
Usually, pasta salad is packed with carbohydrates. Just one serving--and who has just one serving, let's get real--has dozens of grams of carbohydrates.
And unless you're planning on doing dozens of wind sprints uphill, on the sand or stadium bleachers, the carbs you don't burn off will eventually get stored as body fat.
Carb-loaded pasta salad also usually makes you feel sleepy because of all the work your digestive system has to do in order to convert the starch into usable energy (sugar). And when you don't burn that sugar, all the blood vacates the rest of your body and surges towards your stomach. That's why a 'carb coma' can set in.

Ok, on to Elizabeth's Recipe:
Miracle Noodle Broccoli and Rice Salad
1-2 Bags of Miracle Rice (prepared)
1/2-1 bag of frozen broccoli (fresh organic is best)
2 tablespoons of grated parmesan cheese
2 oz. crumbled feta cheese
6 black olives (very finely diced)
A few tablespoons of your favorite Italian dressings (To Taste)
Salt and Pepper (To Taste)
Red Pepper Flakes (Optional, To Taste)
Place frozen broccoli in a large bowl. Prepare and add warm Miracle Rice. Stir. Add the rest of the ingredients. Elizabeth says she likes to let this sit for at least an hour before eating, and preferably for a few or overnight. Enjoy!
