⁣⁣"Yesterday I was reading about how quarantine baking is similar to meditation. It has become popular to cope with what is happening around us. Even before self-isolation, I baked; it's a creative outlet. Over the last couple of weeks, I've made bread, banana bread, brownies, and lots of cookies. 

Here are a few:⁣⁣⁣⁣⁣Salted Chocolate Chip, ⁣⁣⁣Peanut Butter Chocolate Monsters, ⁣⁣Pecan Chocolate Chip, ⁣⁣⁣Peanut Butter Caramel. Recipe below;⁣ only 15 calories!"⁣⁣

INGREDIENTS:
⁣⁣⁣
1 bag Miracle Noodle - Any plain type. Try our fettuccine!
1/3 cup egg whites or 2 egg whites ⁣⁣⁣
3 Tbsp PB2 or other powdered peanut butter⁣⁣⁣
1⁄2 tsp baking powder⁣⁣⁣
2 tsp monk fruit sweetener (or sugar-free sweetener)⁣⁣⁣
8 soft caramels (or you can use a different topping like chocolate chips or your favorite low-carb/keto-friendly confection)⁣⁣⁣

DIRECTIONS:
⁣⁣
1. Pre-heat oven to 375 degrees.⁣⁣⁣
⁣⁣
2. Prepare Miracle Noodles according to instructions.⁣⁣⁣
⁣⁣
3. Place noodles in a blender with egg whites. Once it becomes a smooth mixture, pour into a bowl and add remaining ingredients sans caramels.⁣⁣⁣
⁣⁣
4. Cut caramels in half.⁣⁣⁣
⁣⁣
5. Measure batter into 1 Tbsp portions and place them on a non-stick mat. Place a cut caramel on top of each cookie.⁣⁣⁣
⁣⁣
6. Bake for 10 minutes.
