15 Calorie Low-carb Cookies
People are at home and getting creative in the kitchen! Our Ambassador Simone is one of them! She used out noodles - that's right - our noodles, in making these cookies!
Why? Our noodles can act as a low-carb, low-calorie filler. They contain healthy fiber from the konjac plant. They also work as a binder. Check out how Simone used Miracle Noodle as a base for her Peanut Butter Caramel Cookies!
"Yesterday I was reading about how quarantine baking is similar to meditation. It has become popular to cope with what is happening around us. Even before self-isolation, I baked; it's a creative outlet. Over the last couple of weeks, I've made bread, banana bread, brownies, and lots of cookies.

INGREDIENTS:
1 bag Miracle Noodle - Any plain type. Try our fettuccine!
1/3 cup egg whites or 2 egg whites
3 Tbsp PB2 or other powdered peanut butter
1⁄2 tsp baking powder
2 tsp monk fruit sweetener (or sugar-free sweetener)
8 soft caramels (or you can use a different topping like chocolate chips or your favorite low-carb/keto-friendly confection)
DIRECTIONS:
1. Pre-heat oven to 375 degrees.
2. Prepare Miracle Noodles according to instructions.
3. Place noodles in a blender with egg whites. Once it becomes a smooth mixture, pour into a bowl and add remaining ingredients sans caramels.
4. Cut caramels in half.
5. Measure batter into 1 Tbsp portions and place them on a non-stick mat. Place a cut caramel on top of each cookie.
6. Bake for 10 minutes.
