We are kicking off our Fourth of July themed recipes with a healthy Miracle Rice dessert from Ambassador Hannah! This is a low-carb sweet treat, thanks to our shitataki rice. We promise this treat tastes like summer! For natural coloring, Hannah used Maqui powder.
Maqui powder comes from the Maqui berry, which is a powerful antioxidant. According to WebMD, Maqui is used for weight loss, diabetes, heart disease, fatigue, "detoxification," and for general health and wellness.
Fourth of July recipe alert from Craving Happy!
1 bag of Miracle Rice
15 drops vanilla @nunaturals #nustevia (or sweetener of choice to taste)
1 teaspoon maqui powder (for color)
1 teaspoon coconut oil
3 large strawberries, chopped .
3 tablespoons of blueberries .
1) Prepare Miracle Rice according to package directions. Set aside.
2) Combine Miracle Rice, coconut oil, and stevia in a small bowl and mix well until combined. If coconut oil isn’t melting well, feel free to pop in the microwave for 10-15 seconds.
3) Mix in maqui powder for blue base color (optional).
4) Finally, mix in the berries and enjoy! I highly recommend adding a dollop of whipped cream.
