"Celebrating Meatless Monday (for dinner, which still counts) with a twist on the classic Caprese Salad. This recipe is even Vegan-friendly, substituting avocado in place of mozzarella cheese.
While cheese is a great source of calcium, avocados are an optimal source of fat. I certainly can’t forget to mention this dish is significantly healthier than traditional pasta salad, thanks to Miracle Noodle! The “pasta” is made from the konjac plant, providing little to no carbs, and makes for a perfect replacement."
1 package Miracle Noodle Angel Hair
1/4 to 1/2 sliced avocado
5-6 Cherry tomatoes sliced in half
1 tbsp balsamic vinegar
1 basil cube
1. Prepare miracle noodles as instructed. Set aside.
2. Broil chopped tomatoes for 10 minutes until they blister.
3. Assemble tomatoes and sliced avocado on top of noodles.
4. Separately combine basil cube and balsamic vinegar and dress over the caprese combo.
