“What a pleasant surprise from fridge clearing - creamy and crunchy pasta casserole with a twist!
The red pepper flakes gave a moderately spicy flavor and the ground pork rinds added the crunch at the top. And making them into single portions with small glass and ceramics oven safe dishes are so convenient and pretty looking.

I used zero carb ziti pasta from Miracle Noodle but you also use spaghetti or fettucine. Cutting them into shorter strips would give that ziti feel. I used leftover veggies from my fridge but you can opt for any suitable veggies. If you love cheese, you can certainly add more. Super easy to make and super yummy even my carb eating family members gave their thumbs up.”

This recipe serve 3 to 4 people.

INGREDIENTS:

3 packets of Miracle Noodle's ziti pasta
2 cups ground pork (or any meat)
2 cups brocolli florets
1 cup cauliflower florets
1 cup paprika (cubed)
1 1/4 cup cherry tomatoes (cut into small wedges)
1 large yellow onion (sliced)
6 oz or 170gm tomato paste
1 cup Parmesan or shredded cheese
1 cup whipping cream
1 tsp dried oregano
1 tsp dried basil
4 to 6 tsp red pepper flakes
2 tsp black pepper
Salt to taste

FOR TOPPING:

Mix 2 cups ground pork rinds with 2 cups parmesan or shredded cheese

DIRECTIONS:

1. Prepare miracle noodles per instructions on packaging.

2. In a pan, add cooking oil and stir fry the onions, tomato paste and red pepper flakes until fragrant. Add ground pork and stir fry until semi cooked. Then add all veggies, herbs, pasta, seasonings and sauté for awhile. Lastly, add whipping cream, cheese and mix well. Adjust taste accordingly.

3. Spoon into small or large oven safe dishes. Then top with pork rinds and cheese mixture.

4. Bake in oven at 392F or 200C for about 15 to 20 mins ending with top heat to brown the toppings.
