Here’s an easy one-pot meal that satisfies Indian food cravings. It only uses two spices and three ingredients for the sauce.
1 pack of Miracle Noodle Fettuccine
1/2 cup of crab meat
5 chopped sundried tomatoes
1 tbs EVOO
1 tsp salt
1 tsp chili flakes
3/4 cups coconut milk (I didn't use canned, I used regular refrigerated, but you could use canned) OR almond milk.
3 tbsp nutritional yeast
1 tsp paprika
Juice from 1 small or 1/2 large lemon
Generous grind of pepper
1/3 cup chopped broccoli
1 cup chopped spinach
1 cup chopped kale
1. Sauté in a pan on med heat tomatoes, EVOO, salt, and chili flakes- for about 3 mins. Add coconut milk
2. Stir in nutritional yeast, paprika, lemon juice, pepper, broccoli, spinach, and kale. If the sauce is still really thin after 10 mins, you can add a tbsp of corn or tapioca starch to thicken.3. Prepare Miracle Noodle according to package. Add to sauce, stir, add crab meat, and cover for just a couple of mins on low to meld all the flavors. Serve with another little sprinkle of nutritional yeast, pepper, and chili flakes.
