Ham and Pea Risotto
This is a keto comfort meal that we can dig into! Try this Ham and Pea Risotto as a main or side this week.
1 pack of Miracle Noodle Miracle Rice
Kerrygold USA butter
1 cup of frozen peas
Ham from The Honey Baked Ham Company, diced
1. Rinse Miracle Noodle Miracle Rice well and heat through in a dry pan to remove water.
2. Add Kerrygold USA butter and onion to the pan to saute together. Depending on how loose you want it, add a splash or two of heavy cream, white wine, and a little chicken broth.
3. Sprinkle in white pepper and grated Parmesan to your taste.
4. Finally, stir in 1 cup of frozen peas and diced ham and add extra heavy cream if necessary. Garnish with chopped green onion. Voila!!!
