1 Pack Miracle Noodle Spinach Angel Hair
Italian pork meatballs, cooked
2 tablespoons extra virgin olive oil
2 garlic chopped, minced
12 grape tomatoes
1 teaspoon Italian seasoning
Salt and pepper
2 handfuls spinach
1/4 cup cotija cheese
1. Cook miracle noodles according to the package. Rinse for 1-2 two minutes, boil for 2, drain, return to your empty hot pan and move around till all water is absorbed.
2. Cook Italian meatballs.
3. Heat up extra virgin olive in a large skillet. Saute garlic for about 30-45 seconds add grape tomatoes. Add Italian seasoning and sprinkle with salt and pepper. Cook tomatoes until they began to blister, once blistered fold in miracle noodles and meatballs. Simmer for 5-7 minutes.
4. Add spinach to the skillet and wilt.
5. Remove from heat and plate up. Top with cotija cheeses.
