It's a low-carb meal thanks to our Miracle Rice!
"With Mardi Gras around the corner, here’s a Louisianan classic with a healthy twist! What’s healthier? Miracle Rice instead of Regular Rice and a healthier Hot Link Sausage instead of Andouille."

2 Bags of Miracle Rice
2 Servings shrimp
2 Lean Hot Link Chicken Sausages precooked from Safeway
1 Can of tomatoes seasoned with Italian spices
1/2 Frozen bag roasted bell pepper and onion mixture from Trader Joe's
Seasonings: 1 teaspoon each of cayenne, paprika, garlic, pepper, and thyme
1.) Cook shrimp with peppers and onions in a pan while preparing Miracle Rice.
2.) Prepare Miracle Rice by rinsing for one minute, boil for two, drain, return to your empty hot pan and "dry roast" rice till all moisture is absorbed. This allows the rice to soak up the ingredients and flavors of sauces, spices, etc. It also produced the best texture.
3.) Once shrimp is cooked through, add canned tomatoes, chopped sausage (precooked) and spices. Continue cooking and add rice at the end. Allow time for rice to absorb the flavors of this meal.
