Get noodlin' with her recipe for dinner this weekend!
After meal-prepping some Egg Roll in a Bowl, this was dinner: Keto Pad Thai made with marinated Miracle Noodle Fettuccini in a homemade sauce."
2 bags of Miracle Noodle Fettuccini
1/4 cup tamari
2 tbs rice wine vinegar
Juice of 1/2 lime
1/4 cup erythritol
2 tbs sesame oil
Red bell pepper strips
Red pepper flakes
1. Rinse Miracle Noodle Fettuccini for 1 minute. Boil for 2 min, drain. Return to an empty hot pan and dry the noodles out over medium heat till all water is absorbed.
2. Combine tamari, rice wine vinegar, lime juice, erythritol and sesame oil. Add Miracle Noodle to this sauce and marinade for a a couple of hours in the refrigerator.
3. Remove noodles from the refrigerator and gently warm in a pan with chopped cilantro/basil/scallions/bell peppers/red pepper flakes & salt. Garnish with cooked chicken, peanuts, fresh herbs, limes.
