Kimchi Fried Rice
This beautiful kimchi fried rice from Elsie Yan has our tummies grumbling! Make it at home with our Miracle Rice!
"Oh how I missed kimchi fried rice! The leftover egg yolks from making keto bread and leftover roast chicken were perfect additions."
1 packet Miracle Rice
1 to 1.5 cup kimchi
1 cup green mustard (or any green veggies)
3 egg yolks or 2 whole eggs
1 cup roasted chicken (or any meat) sauce
2 to 3 tbsp gochujang paste
2 tbsp soy sauce, tamari or liquid aminos
2 tbsp water
Low-carb sweetener to taste (optional)
1 tbsp sesame oil
1. Prepare miracle noodles per instructions on packaging.
2. In a pan, dry roast the rice without oil until squeaky. Push aside in pan.
3. Add some cooking oil, stir fry kimchi and chicken for awhile. Then mix with rice, veggie, sauce and stir fry for awhile.
4. Push rice aside, add some oil and pour the eggs in. Scramble until almost dry then mix with rice. Adjust taste accordingly.
5. Dish up and serve hot.
