"Easy lunch recipe that looks like it took all day to prepare. Indian inspired Korma Noodles using @miraclenoodle along with crispy sheet pan chicken thighs that I picked up from @thecastawaykitchen page. Recipe Below."

1 package of Spaghetti Miracle Noodles
2 tablespoon butter flavored coconut oil
2 cup shredded cabbage mix
2 cups spinach/arugula
2 tablespoon roughly chopped cilantro
⅓ cup sliced roasted red pepper
2 tablespoon coconut cream
1 tablespoon fenugreek leaves
1 tsp curry powder
½ tsp granulated garlic
½ tsp onion powder
½ tsp garam masala
Salt & pepper to taste
1. Drain and rinse noodles under hot water for 30 seconds to a minute. In a pan heat coconut oil and add noodles once oil is hot. Sauté for 2 minutes.
2. Add seasoning to the pan and stir until noodles are coated.
3. Add cabbage and cook for two minutes then add coconut cream.
4. Continue stirring until coconut cream has coated the noodles then add spinach/ arugula, cilantro and roasted red peppers.
