Having a game plan makes it easier to stick to your healthy eating plan. Our Ambassador Charlie used this recipe while preparing for a contest. She loves to use Miracle Noodle to bulk up her meals with healthy fiber, like this Lean Chicken with Greens and Sweet Potato.
4 oz boneless skinless chicken breast, cooked and cubed
4 oz broccoli florets, steamed
3 oz sweet potato, steamed
1 bag Miracle Noodle Angel Hair
1 ½ tsp low sodium soy sauce
Sprinkle of Trader Joe’s bagel seasoning
Juice of half a large lemon
1. Drain, rinse, and pat noodles dry with a paper towel. Microwave in a small bowl for one minute.
2. Spray a small pan with coconut oil. Sauté chicken in the pan on medium heat until warmed through. Let rest. Toss in steamed broccoli and cooked sweet potato into the chicken pan and cook until warmed through and crispy, around 5-10 minutes on high heat.
3. Add soy sauce to noodles and toss. Add the broccoli, sweet potato and chicken on top. Top with lemon juice and sprinkle with bagel seasoning. Enjoy!
