Low-Carb Japchae

"Who else is missing Korean BBQ?? I always order Japchae when I go, so I decided to make a low-carb version at home! I'm using Miracle Noodle Angel Hair and it's the perfect substitute for glass noodles. The best part is you can customize the veggies and protein for this dish to your liking."

INGREDIENTS:
2 packs of Miracle Noodle Angel Hair
1 small carrot, sliced into strips
1/2 onion, sliced in half-moons
2 scallions, chopped
6 oz ground meat (usually beef)
6 pcs fresh shiitake mushrooms
3 cups fresh spinach
Olive oil for stir-frying
Salt and pepper
SAUCE:
4 Tbsp soy sauce
2.5 Tbsp Lakanto monkfruit sweetener
3 Tbsp sesame oil
1 Tbsp minced garlic
2 tsp roasted sesame seeds
DIRECTIONS:
1. Mix the sauce and add to meat and mushrooms.
2. Pan-fry onion, carrots, and add scallions.
3. Pan-fry meat and mushrooms.
4. Cook miracle noodles with package direction, add sauce mix.
5. Blanch spinach.
6. Serve.
