My ultimate game day hack snack -> Mini Pizza Peppers! You only need a handful of ingredients and your microwave! It has all the flavor and goodness of takeout pizza without the bloat. NOM! .
Serving size: 2

5 sweet mini peppers 
2 tablespoons Miracle Rice
2 tablespoons pizza sauce 
8 slices turkey pepperoni 
1 low-calorie cheese wedge (used garlic Laughing Cow) 
Dash oregano 
Dash garlic powder 
Fresh basil


1.) Rinse, drain, and pat dry Miracle Noodle Rice. Microwave rice in a small bowl for 1 minute. Drain and pat dry a final time. Set aside.

2.) In a small bowl, mix pizza sauce, oregano, and garlic powder. Stir in 2 tbsp of rice.

3.) Cut peppers in half and deseed.

4.) Cut pepperoni into 4ths. Stuff each pepper with the sauce/rice mixture. Top with pepperoni and a small chunk of cheese.

5.) Place in microwave for 1 minute. Garnish peppers with chopped basil. Serve with additional pizza sauce. Enjoy!
