Miracle Rice (to make it Keto)
Oil of choice
Japanese sweet potatoes sautéed with sage & shallots
Chopped green onions
Pickled red onions
1. Prepare Miracle Rice according to package. Set aside.
2. Chop potatoe into bite sized pieces and slice shallots. Add to an oiled pan over medium-high heat with spices of choice. Stir every couple of minutes till potatoes are tender. Set aside.
3. Saute mushrooms and spinach.
4. Asemble all ingredients in a bowl and drizzle with dressing.
