Pork Fried Rice

1 pack of Miracle Rice
1 pack of frozen stir fry veggies
Soy Sauce or liquid aminos (to preference)
1-2 tablespoons of sesame oil
1-2 teaspoons of grated ginger
4-6 oz of pork loin
Seasonings to preference: salt, pepper, onion powder
Leek or scallion, sliced thinly on the bias
1. Prepare Miracle Rice according to package. Set aside.
2. In a pan, place the Asian vegetables. Place prepared Miracle Rice in the pan. Season with soy sauce, sesame oil, and grated ginger. Stir and turn down to low.
3. Pre-season pork loin with salt-pepper and garlic powder. In a seperate pan, heat sesame oil till it spreads over the pan. Sear the sides of pork loin, then pan fry till cooked through—cut pork into squares.
4. Combine ingredients from both pans together. Mix everything well and finally add the leek/scallion.
