Pumpkin Arroz Con Leche

INGREDIENTS:
1 bag of Miracle Rice
4 cups of cashew milk
1 cinnamon stick
2 cups of pumpkin puree
1/2 teaspoon ground cinnamon
1 teaspoon pumpkin spice
1/2 tablespoon of vanilla extract
Stevia to taste
DIRECTIONS:
1. Prepare Miracle Rice according to package instructions and set aside.
2. Heat the cashew milk, pumpkin puree, cinnamon stick, pumpkin spice and vanilla extract over medium heat. Cover and let simmer, stirring occasionally, for about 15 minutes or until the milk begins to boil.
3. Sweeten with Stevia to taste and mixed in the MN rice. The arroz con leche will continue to thicken as it cools.
4. Serve warm topped with a little ground cinnamon. Or serve cold topped with a dollop of whipped cream. Enjoy!
