Spicy Chicken, Miracle Rice and Beans Bowl

I used Miracle Rice, which has only 3 grams of carbs and 3 grams of fiber. It's a zero net-carb option that helps me hit my fiber intakes and satisfies me. I do not feel like I'm missing carbs when I use Miracle Rice. This spices I used kickes up the flavor a bunch, and when you're dieting, it's all about what's filling and full of flavor!"

INGREDIENTS:
️1 bag of Miracle Rice from Miracle Noodle
1 Tbs of Butter or Country Crock Light Spread
1 and 1/2 tsp of Dak's Spices KABOOM
1/4 tsp of cumin
1 Tbs tomato paste
1 and 1.5 tsp Dak's Spices Taco Knight Seasoning
Spray oil
1 lb of chicken breast
50 grams black beans
56 grams of pico de gallo
28 grams Reduced of fuill fat Mexican cheese blend
50 grams of avocado, sliced
Cilantro
Green Onions, sliced on the bias
DIRECTIONS:
1. Prepare Miracle Rice by rinsing for 15 seconds. Boil for 2 min, drain, then dry roast in a naked pan till all water is absorbed. Leave rice in pan and turn down heat to low.
2. Add butter/spread, tomato paste, 1 tsp of Dak's Spices KABOOM, cumin. Combine till rice has obsorbed ingredients. Set aside.
3. Season chicken with Dak's Spices Taco Knight. Clean pan and spray with oil. Add chicken, searing sides first, then allow to cook through. When chicken is done cooking, remove from pan and cube into large pieces, around an inch.
4. Assemble your bowl. Start with rice, add chicken, pico, beans, green onions, avocado, cheese, and garnish with cilantro.
NOTE: If you like, you can sub Taco Knight spice for your favorite taco seasonings in lieu of the brand suggested. A substitue for KABOOM could be your favorite cajun spice combo.
