Vegan Avocado Pesto
We love summer-fresh flavors! Here's a dish that is just that, and it's perfect for your Meatless Monday. Our new Ambassador Jill is showing us how to make it!

1 package Miracle Noodle Angel Hair
Half an avocado (about 80g)
10 basil leaves
20 grams of spinach
Lemon juice (about half a lemon to taste)
1/4 clove garlic
1/4 of a shallot (about 5g)
20 grams of grape tomatoes
1. Prepare Miracle Noodles as stated on the packaging. Once cooked, set aside to cool.
2. Place avocado, basil, spinach, garlic, shallot, lemon juice, salt and pepper into a blender and blend until all smooth.
3. Pour avocado pesto over the noodles and mix. Top with grape tomatoes and your favorite grilled protein (in my case Beyond Meat Chicken strips).
