Vegan Pasta with Brussels Sprouts
How about making it pasta night?! Even if you're watching your carb count, you can still enjoy delicious meals with noodles! Our Ambassador Hannah shows you how she made her delicious vegan meal with our noodles.
*Note original recipe calls for Ready-to-Eat Hearts of Palm Pasta. Due to product availability in Canada, we a subbing with our Miracle Noodle Organic Spaghetti.
INGREDIENTS:
1 pack of Miracle Noodle Organic Spaghetti, prepared according to package
1/3 cup canned diced tomatoes
1/2 cup roasted Brussel sprouts
1/3 cup chopped white mushrooms
1/2 tsp minced garlic
2 tsp olive oil
DIRECTIONS:
1. Combine all ingredients except mushrooms in a medium-size skillet at medium heat.
2. After tomatoes have started to cook down (after approximately 8 minutes of cooking), add sliced mushrooms to mix.
3. Cook mixture for an additional 2-3 minutes or until mushrooms are tender.
4. Serve topped with Parmesan and/or a dash of red pepper flakes! I ate this as a side, but it would be great topped with chicken, shrimp, or a vegan meat substitute!
