Zucchini and Mint Miracle Rice

"It’s that time of year when zucchini is in abundance and your friends, family, even strangers are pawning off their obnoxious excess of zucchini to you. Or maybe you are said person growing a large enough yield to open a stand at the farmers market. Either way, this is an amazing MUST TRY keto recipe for the zucchini in your life.
For the keto rice, I use Miracle Noodle Rice. It's gluten-free, grain-free, and zero net-carbs. The Miracle Noodle rice and zucchini are combined with mint and pesto...a surprisingly incredible combination.

INGREDIENTS:
2 packages of Miracle Rice
2-3 tablespoons of avocado oil
¼ cup red onion, diced
2 garlic cloves, minced
1 zucchini squash, diced or sliced
2 teaspoons fresh mint, chopped
⅓ cup pesto
½ cup Parmesan cheese (or cheese alternative)
1. Cook Miracle Noodle Rice according to package directions and set aside.
2. Heat avocado oil in a skillet over medium heat. Add red onion and cook until softened. Add garlic and cook for additional 30 seconds.
3. Add zucchini and turn up the heat to medium-high. Cook until tender (6-7 minutes). Stir often.
4. Stir in mint. Turn off heat. Season with salt. Add pesto and Miracle Rice. Stir in Parmesan cheese.
